A simple recipe for soft, fluffy pita. Perfect for gyros, kebab or souvlaki.
In a bowl, mix the yeast with warm water, warm milk, olive oil, and salt.
Gradually add the flour to the liquid mixture, stirring until the dough comes together.
Cover the bowl and let the dough rest in the fridge for a couple of hours.
Remove the dough and divide it into equal portions, depending on your preferred pita size (around 100g per pita works well).
Roll each portion into a circle and let them rise under a towel for about 30 minutes.
Heat a cast-iron skillet over medium heat and cook each pita until both sides are golden brown.
Enjoy your freshly made pitas!
